Grape varieties: 100% Sangiovese
Production area: lands are locateci in the high hill of Aso Valley (more than 300 MASL), the soil is characterized by a medium mixture, a good amount of limestone (more than 15%), and a superficial phreatic zone.
Vinification: grapes are manually harvested slightly early in order to avoid peels' excessive coloring; in the celiar, grapes are carefully pressed and the must, which is pale pink coloured, is clarified through natural settling; low-temperature fermentation starts (12-14°).
Aging: the wine rests on fine lees for about two months, this helps to naturally absorb the remaining colouring part, thus giving both roundness and longevity to the wine.
Service temperature: 10 - 12°. A lower temperature accentuates the aggressive notes of residual polyphenols of grape origin.
